Indonesian Soto Ayam

One of my family’s favourite dinner menu, Indonesian Soto Ayam. We served it for dinner yesterday.Some will say it looks like normal Chicken Soup 😄 because the ingredients are quite similar. 

I love the fact that my kiddos learn to be familiar with Indonesian spices since young. And the fact that they will miss this dish as they grow.

I cooked this dish in a very simple way yesterday as I avoided extra washing by using blender to blend all the spices.

These are the steps:

  1. Clean the chicken, prepare some water
  2. Boil water, put all the chicken parts, let them cooked for a while, put some salt into the soup
  3. Chop carrots, pour them to the soup
  4. Chop the spices ; shallots (7-8 parts), garlic (2-3 parts), lemongrass (5 stalks), coriander seeds, turmeric powder
  5. Stir fry the spices till they are fragnant 
  6. Pour the spices into the soup
  7. Add salt and sugar, taste the soup
  8. Pour some fried potatoes into the soup
  9. Take the chicken out of the soup, split them into pieces
  10. Strain all the spices so you get the clear soup
  11. Serve the soup with vermicelli, boiled egg, bean sprouts, and spring onions
